Apple Spice Pancakes
The problem with gluten free flour is…..it just tastes bad. I purchased a particular brand that contains, garbanzo bean flour, tapioca, oat, sorghum, and some other bean…….to come up with a recipe that is healthy for those gluten sensitive people who still want to enjoy life a little, and have a pancake. So, my advice is to avoid the bean flour for these pancakes and use oat flour and tapioca….it’s much better.
Please take note: The banana and apple with a small amount of maple syrup add plenty of sweetener. Since, my hubby doesn’t like pancakes……who doesn’t like pancakes?…….I made him the Apple Walnut muffins below. He thought they were really good:).
3/4 Cup oat flour
1/2 Chopped Apple
1/4 Cup Tapioca Flour
1 Cup old fashioned organic oats
1/4 Cup flax-seed meal
1/2 Tsp baking powder
1 Tsp cinnamon
1/2 Tsp ground allspice
1 Tsp ginger
2 Tbsp maple syrup (agave nectar, honey….your choice)
1/4 Cup Vanilla almond milk
Combine all dry ingredients in a bowl. In a separate bowl mash the banana, then add eggs, milk, and maple syrup. then finely chopped apple. Fry over medium heat in very small amount of coconut oil until bubbly, turn over and finish about 1-2 more minutes.
2 heated apricots (washed, but not peeled)
1/4 c agave nectar
1/2 cup water
puree and heat on stove until just warm, using a whisk to incorporate flavors…you don’t want to overheat or boil,…..then you lose all the good antioxidants.
OR…….make Apple Pecan Muffins
Don’t despair if the pancake recipe is too much batter.!
Just whip up some apple, walnut muffins or mini loaves instead!
Lightly grease mini- muffin pans with coconut oil, put 1 tsp of maple syrup in the bottom, a few chopped walnuts, and small bits of chopped apple. Pour your remaining batter over the apple nut mixture and bake at 350 for 25-30 min.
