The texture of this fruit raw is a bit difficult for me to acclimate to, but the flavor is similar to that of a peach. I prefer to puree it and make sauce or an Apricot Syrup for pancakes, due to it’s texture.
The chicken can be prepared to your choice, baked, saute’d or grilled, If you choose baking, coat the chicken with the sauce, if grilling or sauteing—brush on at the end and top with fresh chopped rosemary. I’m impatient when I’m hungry, so I cut the chicken breast in half and bake it 20 min. at 350. Saute or Grill 15 min or less depending on your appliance and heat setting.
1/2 tsp salt free seasoning
1/2 tsp dried mustard
1 tsp honey
1/2 tsp rice vinegar
1/2 tsp pepper
1/2 cup water
Puree in a food possessor and apply to chicken as directed above. Top with fresh rosemary and enjoy!
