This very simple avocado chicken salad is no original. Mixing the delicious flavors is so easy and full of flavor. It’s creamy crunchiness will impress everyone at your next gathering!
The good fat in avocados is beneficial to skin, hair, nails and bones. It’s packed with vitamins and minerals and can be used in place of mayonnaise in chicken salad.
All you need is:
2 shredded chicken breast ( I like to use a rotisserie chicken I pick up at the grocery. You can buy a couple and bake, boil, saute…..however you like)
2 avocados, mashed
1/2 red onion finely minced
1/4 of a red pepper finely minced
Juice of 1 lime ( you can use lemon if you like)
1 tsp salt free seasoning
1/4 tsp pepper
2 packages of fillo shells, thawed
Squeeze the lime juice over the avocados as you mash them. Add to shredded chicken, along with onion, seasoning, and red peppers. Place in fillo shells and it’s ready to serve.
