This classic and easy dish is a win for a quick lunch on the go, using the previous basic tortilla recipe, prepared ahead of time.

Start with 2 Homemade tortilla shells (click for recipe)
1 fresh avocado.
Juice of 1/2 lime
1/4 tsp salt free seasoning
Your choice or both
6 fresh cherry tomatoes or 1/4 cup Chopped roasted red peppers (in ajar of fresh)
1 tablespoon red onion
1 pinch of garlic powder (optional)
Cheese lovers can add a 40 calorie slice of low fat pepper jack cheese to make this an avocado quesadilla! But it’s really tasty either way.
Warm the tortilla shells in the method you prefer. In a small mixing bowl mash the avocado with seasoning an lime juice. Spread over tortilla shell and top with tomato (or peppers), onion. Place another warmed shell over top and slice into wedges.
