This sweet fall coconut pumpkin granola went over pretty graciously too this week. I have found I am very sensitive to chocolate….therefore, I had to give the whole batch away.
My acute sore throat discomfort from eating chocolate becomes someone else’s joy. That’s a win situation for my friends and family!
There are so many granola recipes out there we can become easily bored with it, yet I never do! I play with every thing in my cabinet as some of you may do too! Others would not even think about changing a recipe, so here goes…….enjoy!
3 Cups organic old fashioned oats
1 Cup flax seed meal
1/2 Cup slivered almonds
1 Cup pumpkin seeds
1 Cup unsweetened coconut chips
1/2 Cup semi sweet mini chocolate chips
2 Tablespoons chia seeds
1/4 Cup agave nectar or honey
1/4 Cup melted virgin organic coconut oil
1 Egg, beaten
Mix all dry ingredients in a large bowl. In a separate bowl mix egg, melted oil, and agave and incorporate into dry ingredients, covering all the oats well. Spread on a very lightly greased cookie sheet ( I use a half tsp coconut oil and spread it thinly) Bake in a preheated 350 degree oven for 20-25 minutes, Stirring about every ten minutes to get all sides brown. Let cool and store in jars or zip lock bags for a week……it won’t last that long.
