If presentation were everything, my family would have starved to death. Thankfully for me, they ate when they were hungry and trusted the cook…..most of the time.
Wild caught flounder was on sale at the grocery store this week $3.29 for four pieces….what a bargain. Of course, all I could think of was the cute little fish swimming around with Ariel. The decision made, I’ll give it a try.
Baked or pan seared in the skillet, however you like your fish the fastest, this fish was delicious! I went back today and bought two more bags. Here is a paleo version of spinach pesto to top it off. Possibly not technically pesto since there is no cheese, so how about spinach relish or sauce.
Spinach Lemon Relish
1 cup fresh organic baby spinach
1/4 cup fresh basil
2 tbsp organic olive oil
1/8 tsp salt
1/8 tsp pepper
juice of one lemon
1 clove fresh garlic
2 tbsp sliced almonds
Place in your favorite food processor and enjoy! I like it light on the garlic side, so if you want to add more go for it, if you want the cheese to make it a true pesto add 1/4 cup Parmesan, it’s really up to you. This version is lower in salt.
