Another Pinerest recipe that opens my taste buds! Of course, when you don’t have the ingredients you adapt it to what you do have. It’s good either way.
2 cups precooked Quinoa (cooled)
1/2 cup chopped pumpkin seeds
6 dates (placed in hot water 10 minutes, keep the juice)
1 tablespoon of cocoa powder
1/2 cup all natural peanut butter or almond butter
1/4 cup sesame seeds
Combine prunes and dates with 1/2 cup hot water and set aside until softened. I cut the tips off the prunes. Puree until smooth. Place quinoa in a large mixing bowl, add the pureed date/prune mixture, peanut butter, pumpkin seeds, mix until thoroughly combined. Roll into 1 inch balls and roll in sesame seeds.
You could change this up and roll it in unsweetened coconut too, that would be good.
