These gluten free cranberry scones are lightly sweet with a fresh orange zest that provides wonderful flavor. Soaking the dried cranberries helps soften them for easier chewing and better texture. I hope you enjoy!
Start with the basic gluten free bread mix found on this site, then add the following:
1 1/2 cups flour mix (see above)
1/4 cup coconut oil
2 tsp orange zest
1/4 cup honey
1/3 cup vanilla almond milk
1/2 cup (reduced sugar) cranberries
Mix dry ingredients then add coconut oil, honey and almond milk. Scoop onto lightly greased stone baking sheet. Shape into round like biscuits. Bake in Preheated oven at 425 for 12 min, (golden brown on top).
