These tasty chips are NONGMO, low sodium, and cholesterol free, with no artificial ingredients. What better way to serve them than with your choice of savory chicken or black beans. I’m thinking of my friend, Karen, making her girlfriends goodies for snack day at her house and hope this will fall right into her plans. The easy vegan “cheese” flavored dip cuts the fat to zero and allows me to control the amount of salt. The nutritional yeast….well, it’s just that packed with nutrition! 1 Tablespoon has 160% of your daily riboflavin requirement and 140% of B6 check it out at Bragg’s website. There are three potatoes in this dish, therefore I did use 1 teaspoon of salt and chose to leave it out of the chicken recipe and rinse the black beans thoroughly. Also, I sometimes substitute two carrots for this dip, although today I chose to use a sweet potato. So, mix it up as you please.
Vegan ‘Cheese’ Flavored Dip
3 Organic White Potatoes (Peeled and chopped)
1 Organic Sweet Potato (Peeled and chopped)
2 Cloves of garlic (Peeled and minced)
1/4 Cup chopped onion
1/4 Cup Nutritional Yeast
2 Cups of Water
2 Teaspoons lemon juice
1 Tsp salt
Place the potatoes, onions, and garlic on the stove in a large saucepan and cover with water. Bring to a boil and simmer until tender. Remove all but one cup of the water and reserve that cup for blending. Place vegetables, juice, reserved cup of water, and salt into a large blender. Blend until smooth. This keeps in the fridge for about 7- 10 days.
Now we’re ready to spice our chicken and marinate it in a little avocado oil to top these delicious chips.
2 Chicken Breasts
2 Tablespoons Avocado oil
1/2 Teaspoon Each—Chili Powder, Oregano, Paprika, Coriander, Dried Cilantro, Garlic
Chop the chicken and add 1 Tablespoon of the oil with all the spices. Bring skillet to nice hot temperature, add 1 Tablespoon of avocado oil. Add the spiced chicken and sauté about 6-8 minutes until done and no longer pink inside.
Prepare your chips, add a little salsa, the prepared chicken, drizzle some Vegan ‘Cheese’ over it and top with green or red onions, fresh cilantro, avocado. Your choice. You can also substitute the chicken with black beans and make a completely vegan dish.
