Quinoa Cherry Almond Bites are little bits of sweet tartness with a dash of crunch. There are several whole grain cereal blends on the market that your local grocery store may carry. Pick the one that you like the best for this recipe. I chose a blend of Quinoa, oats, amaranth, and chia seeds.
Although the blend looks like flour it is not, and it won’t bind without some type of binding agent. I like the gluten free route of using 2 Tablespoons of Tapioca flour. Gluten may not be a problem for you and you can use organic unbleached flour.
If you can’t find the cereal blend in your local grocery store just substitute 1 cup cooked quinoa and leave out the eggs.
Here is what you need:
Quinoa Cherry Almond Bites
2 Cups Quinoa Whole Grain Cereal Blend
1/4 Cup Unsweetened Applesauce
2 Tablespoons Maple Syrup
1/2 Cup Dried Cherries
1/2 Cup Almonds (whole or chopped)
3 Tablespoons Walnut Oil
2 Tablespoons Tapioca Flour
Place the cereal blend and flour to a mixing bowl. Add the applesauce, maple syrup, eggs, and walnut oil. Then add the cherries and almonds. Shape into small rounds and bake at 375 for 12-18 min (ovens vary and how crisp you like your cookies) and they are golden brown.
