Millet Stir-fry with Cajun Chicken
In a Medium Skillet Sauté the following:
1 Teaspoon of coconut oil (heat first)
1 Clove of Garlic
1/4 Cup onion
1 Diced carrot
1 Small diced zucchini
Cook until tender then add :
1 Tablespoon Rice Vinegar
1 Tablespoon Low-sodium Soy Sauce
1/4 Red Bell Pepper cut into strips
1/2 Cup fresh sugar snap peas
Meanwhile in a separate pan sauté:
1 Tablespoon Olive Oil
6 Chicken Tenders (Coated with Cajun spice blend)
Sauté until chicken is tender and completely done, about 10-12 minutes.
Serve over stir-fry and enjoy.
