Sometimes we just need some quick sustenance…..
I know, I’m on a millet kick. A friend informed me recently that the natives of South America cannot afford quinoa because we rich Americans are demanding it. Alas, my desire for quinoa is now diminished if it creates a hardship for another.
A healthy, gluten free substitute with plenty of iron, magnesium, and manganese is millet. I love these flavorful millet energy bites because they are moist on the inside, crunchy on the outside. Also, they give me the minerals and the Omega’s I need for quick thinking and boosting low energy.
On the Outside…..
Get a small load of this muscle boosting coating of nuts that add up to a nice serving:
You’ll need 2 Tablespoons of each lightly mixed on a medium size plate.
Sesame Seeds——-Magnesium, Folate, Fiber, Zinc and Iron
Hemp Seeds———Protein, Omega 3, Omega 6, Iron
Pumpkin Seeds——Magnesium, Phosphorous, Iron, Protein (9 grams per tablespoon!)
On the Inside…..
2 1/2 Cups Millet———Omega’s, Folate, Manganese, Magnesium
1 1/2 Cooked, Peeled Sweet Potato
1 Tablespoon Agave
2 Tablespoons Molasses
2 Tablespoons of Chia Seeds—–More Omegas! A little calcium, plenty of fiber.
So, mix the Inside ingredients together in a mixing bowl. Shape them into 1 inch balls and roll in the seed mixture above. Chill in the refrigerator for up to a week.
