This White Bean and Quinoa Chili is a very simple way to enjoy a complete protein, while maintain a low fat , low sodium regimen that assists improving overall health. If you make the whole batch you’ll be able to share with someone!
White Bean and Quinoa Chili
2 Cans Great Northern Beans
2 Cups Cooked Quinoa
1/2 Large Chopped Onion
1 Can Chopped Green Chilies
2 Cloves Minced Garlic
2 Teaspoons Ground Cumin
1 Teaspoon Oregano
2 Teaspoons Poultry Seasoning
1 Box Low Sodium Chicken Broth (32oz)
1/2 Cup Chopped Green Onion (optional for garnish)
1 Teaspoon Fresh Cilantro (optional freeze dried is ok, ) for Garnish
In a 3 quart stock pot, begin by sautéing onions and garlic in 1/4 cup of the chicken broth. When the onions and garlic are tender (2-3 minutes) add the green chilies, spices, and one can white beans (drained). ****You can add both cans at this point, but I like to puree one can in its own juice to make a creamier soup****Add remaining chicken stock and bring to a boil. Quinoa is added last, simmer 3-4 minutes and your soup is ready!
