They are good no matter how you prepare them. This Sweet Potato Harvest Soup topped with kale chips is quite yummy. And you won’t labor too much preparing this tasty stew. Chop and drop these lovelies…….
……..add some organic chicken broth and spices. Labor is done. This stew is ready in 30 minutes. Then you can rest!
Exodus 34:21 says, “Six days you shall labor, but on the seventh day you shall rest; even during the plowing season and harvest you must rest.” I think about the harvest season a lot this time of year. It’s a cool September day here and a perfect day for planting broccoli and kale.
I’m looking forward to those two growing well in this cooler than usual end to summer. Although, plowing for us is minimal, labor is ever present. Trying to balance work, family, dinner is laborious. Our rest is necessary to refuel, be thankful, and reflect on the good things God provided this week.
So enjoy a little harvest soup while you rest today! Here’s what you’ll need:
Sweet Potato Harvest Soup
4 Organic, washed sweet potatoes
1 Bunch Organic Leeks, washed, chopped
1 Yellow Squash
6 Organic, Button Mushrooms, cleaned and chopped
2 Cloves Minced Garlic
2 Tablespoons Extra Virgin Olive Oil
1 Teaspoon Each—-Thyme, Rosemary, Cardamom, Marjoram.
1 32 ounce Box Low Sodium Vegetable Broth
In a large stock pot, cover the bottom with vegetable broth. About 1 cup. This is how I sauté my vegetables. Add the potatoes, leeks, squash, and garlic. Stir frequently.
Meanwhile, in a skillet place the olive oil and heat. Add the chopped mushrooms and sauté until tender. Once done place in stock pot with potatoes. The stew is now ready for the spices. It is done when the potatoes are tender.
Top with fresh baked kale chips.
Alternatives:::::: I like to add some cooked cod fish to mine for a more hearty stew. If you like things creamy you can also add a teaspoon of half/half to your bowl.
Another way to enjoy this stew is to add 3, chopped fillets of cod or whiting to this and simmer 10 minutes. If you do this the dish should be eaten within a day. That’s why I like to add the fish just to my bowl.
