What to do with white button mushrooms?
The healthy fungi that helps lower cholesterol, increase the immune system, and load us up with iron and fiber. They are handy for a 30 minute soup, see Sweet Potato Harvest Soup. As well as this yummy, wild caught whiting and roasted asparagus dish, also ready in 30 min.
Simply remove 4 frozen Whiting fillets (or fish of your choice) from a freezer, thaw them per package directions.
Place them in a large zip lock bag and add the following marinade:
1/4 Cup Olive Oil
2 Tablespoons Apple Cider Vinegar
1/4 Tablespoon Coconut Amines
2 Teaspoons Honey
1/2 Teaspoon Pepper
1 Teaspoon Dried Mustard
1 Teaspoon chopped fresh ginger
Place over the fish in the bag and set aside.
Wash and prepare button mushrooms and asparagus.
Place them on a baking sheet and drizzle 1 tablespoon of olive oil over them. Using your hands, toss them lightly to coat all sides will with the oil. Season with pepper. Scoot them to the side and place the fish fillets next to them.
Bake at 4oo degrees until the fish is done, about 15-20 minutes.
Serve with a delicious blend of lettuce and cucumbers!Print This Post
