stewards of God’s grace in its various forms.
Faithful stewards love to use their gifts to serve others…..even when they don’t recognize them as gifts of grace. Grace is defined as free, unmerited favor as manifested in the salvation of sinners and bestowal of blessings.
Let this creamy 30 minute chicken stew with homemade egg biscuits bless you and your family today. Moreover, if it’s just you in the house, bless a neighbor. Also, you can totally cheat like I did and use a Mirepoix style blend of carrots, onions, and celery to avoid chopping.
30 Minute Chicken Stew
3 Chicken Breasts Chopped Small
1 12 Ounce Bag of Mirepoix Style Blend Frozen Vegetables
1 Cup frozen Peas
1/2 Teaspoon Pepper
1/2 Teaspoon Poultry Seasoning
1/4 Cup Heavy Cream (optional)
3 Cups Low Sodium Chicken Broth
3 Tablespoons Organic Unbleached Flour
1 Tablespoon Olive Oil
1 Organic, peeled, chopped sweet potato
Preheat Oven to 450
Heat a large skillet on the stove and add olive oil, then chopped chicken. Cook 2 minutes add the vegetables and all but 1 cup of the chicken broth. Let simmer at a low boil for about 15 minutes. Add the flour to the remaining cup of chicken broth, stir until dissolved. Pour the flour/broth mixture into the skillet, then add heavy cream. Cook another 10-15 minutes until your biscuits are done.
2 Cups Organic Unbleached Flour
1 Teaspoon Cream of Tartar
1/2 Teaspoon Salt
4 Teaspoons Aluminum Free Baking Powder
1 Stick Butter
2/3 Cup Milk
1 Large egg
Combine flour, salt, baking powder in a mixing bowl. Cut butter into small squares and work it into the flour mixture with a fork or use your hands. Break egg into the milk and mix well. Pour into the flour and continue to use the fork to combine ingredients. I don’t over kneed this, just mix until all flour combined and a dough forms. Roll out onto a floured surface to about 1 inch thick, cut into biscuits with a biscuit cutter. Bake at 450 for about 10-12 minutes (until golden brown on top).
You might say this isn’t heart healthy. It is not highly processed food, but whole food. Knowing exactly what is in the food you eat is a super smart thing to do to help be a good steward of your body. The temporary vessel housing the Holy Spirit.
