Making your own Turkey or Pork Sausage is really easy and fun. You control the fat and salt that is added.
No nitrates or nitrites in this breakfast dish. It is so much leaner and lower in sodium, you can use the darkened pan drippings to make gravy.
Choose the pork or sausage of your choice. I chose the 93% lean ground turkey. Leaner meat requires more flavor, so I added a little mono-saturated fat with some olive oil.
1 Pound Ground Turkey (93% or 85% lean)
3 Tablespoons minced onion
1 Clove minced garlic
1/2 Teaspoon Pepper
1/8 Teaspoon Allspice
1/2 Teaspoon Celery Seed
1/4 Teaspoon Cumin
1 Tablespoon Olive Oil (optional)
Combine ingredients in a mixing bowl until all spices are incorporated. Shape into patties and place in heated skillet. Cook on low until completely done inside. Remove from pan.
Add 1 tablespoon of olive oil to the skillet and incorporate 1 tablespoon flour. Add 1-2 cups low sodium chicken broth to the flour and oil and whisk in pan drippings to make gravy.
