Here’s what you’ll need:
1 Whole Butternut Squash (Baked, 45min at 400,skin on)
1 32 Ounce Vegetable Broth
2 Teaspoons Greek Seasoning
1 10-12 ounce bag Meripox Blend Veggies (onion, carrots, celery)
1 1/2 Cups Red Quinoa (Precooked)
Pour 1/2 cup of the vegetable broth in a skillet and add the bag of onion, carrots, celery. Add the Greek seasoning. Sauté until just tender, about 10 min. Turn off heat. Peel the cooled butternut squash, remove seeds, and place in a blender. Pour into a 2 quart sauce pan and add vegetable broth, sautéed veggies and cooked quinoa. Bring to a simmer and serve.
