Then their father Israel said to them, “If it must be, then do this: Put some of the best products of the land in your bags and take them down to the man as a gift—a little balm and a little honey, some spices and myrrh, some pistachio nuts and almonds.
I have no doubt the best products in the land include almonds and a little honey. You can’t beat them and they are so much better for the sweet tooth craving than the highly processed, sugar loaded, treats we are bombarded with today.
These Almond Coconut Granola Bars are inspired by my daughter’s mother-in-law. Sweet lady, tried one of the recipes on this blog and brought me the ingredients! How’s that for the unspoken words in a gesture!
Furthermore, the chipped coconut and walnut oil will be put to good use in this, hopefully, more palatable recipe! So sorry, Nina! Feel really bad you bought all this stuff only to give it away.
Almond Coconut Granola Bars
2 Tablespoons and 1/2 cup Walnut oil
2 Cups Oats
1/2 Cup Chia Seeds
1 Cup Silvered Almonds
2 Cups Chipped Coconut
1/4 Cup Coconut Sugar (or 1/2 cup honey/maple syrup)
1/2 Cup Soy Free Mini Dark Chocolate Chips
Preheat Convection Oven to 350. Use the 2 Tablespoons walnut oil to grease a 9×13 baking pan. Combine the oats, chia seeds, almonds, coconut, and chocolate chips in a large bowl. In a small bowl beat the eggs, remaining walnut oil, and sugar (or honey/maple syrup).
Pour oil/egg mixture over the oat mixture and combing until oats are well coated and moistened. Place in the greased 9×13 pan and bake for 20-23 minutes —-until golden brown on top. Let cool and cut into bars.Print This Post
