1 Peter 4:8-10
Above all, love each other deeply, because love covers over a multitude of sins. Offer hospitality to one another without grumbling. Each of you should use whatever gift you have received to serve others, as faithful stewards of God’s grace in its various forms.
Not everyone has the gift of hospitality, nor the gift of not grumbling.
I love how my Polish friend Halina has the gift of both. To this day, she is the best hostess I am honored to know. It is she, who displays the grace to others God’s word insist we follow.
Halina is the faithful steward in so many forms, she offers the homeless a place to sleep, feeds the hungry, and loves in spite of treachery or manipulation.
She also taught me to flavor cabbage for the greater enjoyment of my family. This loaded cabbage soup is in honor of her unfailing stewardship of serving. I praise God for placing her in my path!
Loaded Cabbage Soup
1 Head Fresh Organic Cabbage (chopped and rinsed well)
10 Finely Chopped Mushrooms
1 Large Onion Chopped
3 Cloves Garlic Minced
1 Pound 90% Lean Ground Beef
3 Carrots Chopped (about a cup)
1 Parsnip (peeled and chopped)
1 Cup Chopped Leaks
2 Teaspoons Ground Cumin
1 Teaspoon Allspice
2 Tablespoons Fresh Grated Ginger
1 Teaspoon Coriander
1 Teaspoon Oregano
2 32 oz Boxes Low Sodium Beef Broth
In a large Stock pot: Sauté ground beef with onions, mushrooms, garlic, leeks.
When vegetables are tender, add the carrots, cabbage, and parsnips.
Add 2 cups of the broth to steam the cabbage, stirring every few minutes.
The cabbage will wilt and become tender. I continue to add 1st box of broth so the vegetables steam until tender. Then add the remaining box of broth and let the soup simmer about 30-40 minutes.Print This Post
