I like how proverbs 13:4 tells me the desires of the diligent are fully satisfied. I pray the diligence of your hard work doing good will bring you great joy. Also, preparing God’s delightful provision from the garden satisfy your appetite.
This easy recipe serves two.
Thaw 2 Pieces of frozen flounder set aside.
Chop the following and place in a heated skillet with 2 tbsp. olive oil.
1 Sweet Potato (microwave 2 minutes to speed doneness)
1 Bulb Fennel (sliced thinly and chopped fine)
4 Green onions
Sauté until all vegetables are tender. Then add 1/4 cup precooked quinoa or long grain brown rice. (You could also add 1 Tbsp. of chia seeds for extra crunch and fiber)
Meanwhile, brush flounder with olive oil and Greek Seasoning and bake at 400 10-12 minutes until done. Serve with Sautéed vegetables.
Mix Fennel Pesto with 2 Teaspoons Greek Yogurt for a sauce to top your fish.
