If you feel like a sweet, omega rich soup that’s light and satisfying, try this Sweet Potato Cod Fish Soup. I am continually amazed at the medical community and it’s narrow minded view of what is best for people to eat.
The latest breaking documentary insists vegan is the only way. Hmmm, is it the only way for the people with autoimmune disease who react to lechtins or cannot digest beans to eat? Or the person with celiac disease who cannot digest gluten? A plant based diet is a very healthy, God given, natural way to eat whole food.
Let’s just keep in mind those who need alternative methods of obtaining their nutrients. After, all Jesus, in his resurrected body, asks the disciples in
Luke 24:41-43, “Do you have anything here to eat? They gave him a piece of broiled fish, and he took it and ate it in their presence.”
If fish is good enough for Jesus in his resurrected body, then it’s good enough for me in this simple and delicious soup. I hope you enjoy it too.
2 Sweet Potatoes
1 16 ounce Cod Fish, thawed and cut into squares
24 Ounces Vegetable or Bone Broth
1 Zucchini Diced
1 Carrot Diced
3 Cloves Minced Garlic
1/2 Chopped Onion
1 Peeled, Chopped Parsnip
1/2 Teaspoon Thyme
1/2 Teaspoon Marjoram
1/2 Teaspoon Pepper
1/2 Teaspoon Salt
1 Tablespoon Olive Oil
In a large stock pot, sauté the onion, garlic, parsnips until tender.
Add the broth, sweet potatoes, zucchini, carrots and spices. Bring to a boil and simmer until vegetables tender about 45 min. When the vegetables are tender add the cod fish and cook ten more minutes. It’s ready to serve.
